Grown by various producers in the Tacámbaro region of Michoacán, in central Mexico, this is a washed coffee processed by Finca Pantano's Javier Jimenez. Local avocado producers who also grow coffee sell their coffees to Javier who processes this coffee to Specialty Coffee standards.
Process -
Grown at 1900 MASL, this coffee follows a washed process where the pulp and other layers of the cherry were removed using a mechanical depulper. This coffee has a vibrant acidity, sugar-like sweetness, and intense floral aromatics.
