Finca La Suiza is managed by Adriana Adolphs together with her sister, which is why this coffee is presented as a women-produced coffee known as “Café de Mujer”.
The Tabi varietal is a hybrid of Typica, Bourbon, and Timor, resulting in a fruited & expressive coffee that is meant to also be resistant to coffee tree disease, as it was developed to resist leaf rust.
Process -
This is a fully-washed coffee grown at 1500 MASL. In this process, the coffee was depulped and fermente in tanks between 14 to 36 hours. This coffee has a pleasant citric acidity, sugar-like sweetness, and subtle florals.
Tasting Notes - Citrus, brown sugar & white florals.
